Made by Guelph's own Escarpment Labs. This is their Spooky Saison yeast. This particular strain is a little different from Escarpment's other Saison yeasts. It produces a beer with balanced saison characteristics. Apparations of spice, and a spectre of orchard fruit. Pairs nicely with Brettanomyces strains.
