Malic Acid

Malic Acid Together with tartaric, it accounts for nearly all of the acidity in grapes. Both malic and citric acids are used for deficiencies in other fruits. Its main disadvantage when acidifying is that it buffers to a fairly high pH so it wont do much to help high pH musts.
