Cocoa's for Cobblers - Hot Chocolate Stout Recipe
This month we’re making a spiritual successor to one of our originals: Coffee’s for Closers. Instead of coffee, this is all about the CHOCOLATE. We want a rich, chocolatey stout with a tiny bit of heat. The beauty of this recipe is that at 5.2% it’s still really sessionable. This one took a few tries, but we’re very happy with the balance we found. To get the full Cocoa’s for Cobblers experience we highly recommend adding all the optional extras: The Cocoa Powder, The Habanero Extract, and the Lactose. The cocoa powder adds even more chocolatey goodness to the beer. The Habanero adds a tiny bit of heat that complements the richness of the beer, and the lactose smooths it all out and gives it a great mouth feel.

West Coast Best Coast
West Coast Best Coast is our return to the roots of IPAs. This one is big, chock full of both bitter hop and flavouring hop additions. It has a strong malt backbone that balances out the strong hoppy flavour. Clocking in at 6.5-6.8% ABV and with 60 IBUs – it’s a big beer. So put down that juice bomb and come back to the OG IPA Style.

Lazy Pumpkin Ale or Harvest Ale
Well, we went and finally did it. We did the pumpkin thing. Our goal was to make a pumpkin flavoured beer that is enjoyable, approachable, and repeatable all year round. The thing with making beers with fruit, or other exotic flavours is that you must be very careful in how you add those flavours. Fruit additions can cause extra unexpected fermentations, have drastic effects on clarity, or can inadvertently add a bunch of acidity that throws your mash pH all over the place.

Cheat Code Märzen
We’ve been working on this one for a while. The idea was to create an authentic Oktoberfest style Märzen, but in an accessible fashion. Traditional Märzen beers are fermented like a lager at a consistent 10°C, and then aged (lagered) at 0°C for months before being consumed. This process requires equipment, storage space, and patience (:p) that not all of our fellow homebrewers possess. The goal was to make an authentic tasting Märzen recipe that can be brewed at room temperature and be enjoyed in a shorter time. And, we ah, nailed it – this one is a winner.

Summer of SMaSH
A couple of fun new ingredients are rolling into the store, and we thought it would be a good time to make some SMaSH’es. For those unfamiliar, a SMaSH beer refers to a Single Malt and Single Hop. Basically, it’s a way to focus in on flavours of a specific set of ingredients. Most beers are made of multiple grains and hops leading to a delicious combination, but in this case, we want to see what our new malts and hops taste like.

HAZE | Citra Pale Ale Recipe
We LOVE hazy IPAs here at KJ, and we’re not alone. More and more breweries are making super juicy, hop forward beers. Hell, we have 3-4 recipes that are all like that. One thing all of these delicious hazy beers have in common is their high ABV. They tend to range from 6.5-8.5%, but sometimes you simply don’t want a beer with that much booze in it. Enter HAZE, designed and brewed by our very own Jeremy Morris. HAZE has the same super juicy, hop forward notes of NEIPAs but in a sessionable package. Registering in at 5.3%, it is just that bit lighter from its bigger hazy brothers.

Honey Juice #9 | NEIPA Recipe
This is our “house” New England IPA. The grain bill is set in stone and we tend to just tweak the hops and yeast based on availability of ingredients. The finished beer always ends up being hazy without being too opaque, and it bursts with citrus and tropical fruit hop flavours. Finally, the addition of the honey malt gives it a delightful, sweet finish. We’ve been handing this recipe out to people all year looking for a new NEIPA recipe, but we figured it was time to make it legit and turn it into an official Beer of the Month.

My wife and I (Connor) were re-watching Brooklyn 99 and in one of the final scenes in season 2, episode 22 (it’s on Netflix!) Holt became my favourite character. He tells Jake. Call me…. VELVET THUNDER in his perfect, Shakespearian voice. Right then, I knew we needed to name a beer after that. But, what kind of beer is worthy of the name VELVET THUNDER?
