One of the best parts about making beer (aside from drinking it) is the social aspect. Brewers love to swap recipes, discuss what well or horribly wrong in their brews. We thought it would be a fun idea to start a beer conversation here. We’re going to make a beer every month here and encourage other brewers to make it as well. In the end, we’re hoping we can share our opinions and experiences with the recipe and crowd-source some improvements. The recipes will be easy to make and we will gladly assist new home brewers in the production of these beers. They will all be 5.5 gallons in size. We find that after fermenting and racking a 5.5 gallon batch turns into a standard 5 gallon batch pretty quickly.
At the start of every month we will post the recipe in store, as well as on our website, Facebook, Instagram, and Twitter. We will also have a set price for the recipe that will include a discount of up to 25%!
People often ask us what ‘KJ’ stands for. It’s a two-part answer, KJ is both an homage to our original name and to the original owners – Jerry & Kamil. Their son: Adrian has since taken over the day to day operations of the business, but Jerry & Kamil drop by the shop often. Jerry has a cigarette, does the books, and fattens us up with various treats. Kamil comes for the beer.
He prefers European style beers over American ones, but he will resolutely try anything we give him. He’ll complain it’s too hoppy, too bitter, or too fruity. Somehow, the glass always ends up empty. Recently, we had something different from our standard hoppy North American fare – a clean, European style Kölsch. Nary a complaint was heard, now we want everyone else to try it!
Kamil’s Kölsch is a classic example of the German Kölsch style beer. It is very reminiscent of a lager, it features a clean, crisp easy drinking taste with some of the classic spiciness of German hops. This is an exceptionally refreshing beer that is perfect for craft brew enthusiasts all the way to the ‘Bud Light’ crowd. What is especially fun about this beer, is that we used Guelph’s own Escarpment Labs liquid yeast for this batch. We found their Kölsch strain to be the perfect fit for what we were looking for.

- Perle (7.1% A.A.) – 1oz @ 30min
- Perle (7.1% A.A) – 0.5oz @ 5min

Extras
- Irish Moss (1 tsp for last 15 minutes of boil)
- Dry Malt Extract (150-170g for priming at bottling)
