  • ICV-D254 Red Wine Yeast (6g)

    ICV-D254 is our in house red wine yeast for Syrah, Pinot Noir, Barbera, and Valpolicella. We chose this yeast over many others because it enhances the fruit profile of these juices.

    - Has an alcohol tolerance of up to 16%

    - Develops notes of ripe fruit, jam, cedar with mild spiciness. It also contributes to intense fruit concentration and a big mid-palate mouthfeel. 

    - Not as easy to ferment with as EC-1118, temperatures around 22°c are very important.

    Please note, we package this ourselves in 5 gram bags.
